Vegetarian Pigs in Blankets

These vegetarian pigs in blankets are the perfect party food to serve your veggie guests at your next Christmas gathering. These quick to make cranberry glazed sausages require just 3 ingredients and can be ready in under 30 minutes.

Vegetarian pigs in blankets: ingredients

This simple recipe requires just 3 ingredients:

  • Vegetarian cocktail sausages: I used Quorn cocktail sausages. These are vegetarian, however vegan cocktail sausages are available.
  • Vegan bacon: ensure you use a flexible vegan bacon which will easily wrap around the sausages. I recommend using Richmond meat-free streaky bacon, or Tesco Plant Chef smokey bacon.
  • Cranberry sauce: any cranberry sauce will do, I loosened the sauce with a little water to make it easier to pour over the sausages.

How to make vegetarian pigs in blankets

Firstly, preheat the oven to 200℃/180℃ fan (390℉/355℉).

Secondly, slice the bacon into 1 cm strips lengthways. Wrap each cocktail sausage in a strip of bacon. Arrange the sausages on a lined baking tray.

In a small bowl mix together the cranberry sauce and water. Pour a teaspoon of sauce over each sausage.

Finally, bake for 15 minutes until the bacon is cooked through.

Serve the sausages hot or cold with cocktail sticks.

Ingredients
  

  • 20 vegan cocktail sausages I used Quorn
  • 7 rashers vegan bacon use a flexible type*
  • 6 tbsp cranberry sauce
  • 2 tbsp water

Method
 

  1. Preheat the oven to 200℃/180℃ fan (390℉/355℉).
  2. Slice the bacon into 20 1 cm strips lengthways. Wrap each cocktail sausage in a bacon strip.
  3. Arrange the sausages on a lined baking tray. Mix the cranberry sauce with the water in a small bowl. Pour a teaspoon of sauce over each sausage.
  4. Bake for 15 minutes until the bacon is cooked through.
  5. Serve hot or cold with cocktail sticks.

*I recommend using Tesco Plant Chef bacon or Richmond vegan streaky bacon. See above for product links.
