Creamy rose rabokki (tteokbokki + ramen) with instant noodles in a spicy gochujang sauce. Rabokki is a popular Korean dish which combines together noodles with chewy Korean rice cakes, or tteok. This dish is easy to make and can be ready in just 15 minutes.

Rose rabokki (tteokbokki + ramen): ingredients
To make this rose rabokki you will need:
- Spring onion
- Garlic
- Your favourite instant ramen, I used Shin Kimchi ramen
- Korean rice cakes
- Gochujang
- Gochugaru
- Milk
- Double cream
- Soy sauce
- Sesame oil
- Shredded mozzarella

How to make rose rabokki (tteokbokki + ramen):
Start by cooking your noodles. I always boil my noodles for 1 minute less than recommended by the packet instructions. Drain the noodles and rinse them in cold water to stop them cooking further.
Then, in a medium-sized frying pan, heat the vegetable oil and fry the garlic and spring onion (white part only) for 30 seconds. Add in the water, gochujang, gochugaru, soy sauce, 1 tsp of the seasoning packet, and sesame oil. Stir to combine.
Lower the heat and pour in the milk and cream. Stir together before adding in the rice cakes. Simmer the rice cakes for 7-8 minutes, stirring often until they have softened.
Stir through the noodles before sprinkling over the mozzarella and green part of the spring onion. Cover with the lid and cook for 2-3 minutes until the cheese has melted. Serve immediately, enjoy!


Tips and tricks
- Do not overcook your noodles. I always cook my noodles for 1 minute less than recommended by the packet instructions. This ensures the noodles stay bouncy and chewy and don’t fall apart.
- Use your favourite noodles! If you don’t have instant noodles you can replace them with your favourite noodles – I recommend using udon noodles. You can add extra gochujang and gochugaru for more flavour, in place of the ramen seasoning.
- Omit the gochugaru. If you are spice-averse, simply leave out the gochugaru. Gochugaru is Korean chilli flakes, and is quite spicy!
- Add extra ingredients. Rabokki is a versatile dish which you can add your favourite ingredients to. Why no add some veggie dumplings or a soft boiled egg?

What is the difference between tteokbokki and rabokki?
Tteok means rice cake whilst bokki refers to stir-fried food. Tteokbokki is a dish of stir-fried rice cakes, usually in a spicy gochujang-based sauce. Rabokki is simply tteokbokki with added ramen noodles.

- Heat the vegetable oil in a medium frying pan over a medium heat. Fry the white part of the spring onion and the garlic for 30 seconds.
- Add in the water, gochujang, gochugaru, seasoning powder (I recommend only using 1 tsp), sesame oil, and soy sauce. Stir until well combined.
- Turn the heat to low and stir through the milk and cream.
- Add in the rice cakes and simmer, stirring frequently, until the rice cakes have softened and the sauce has thickened, around 7-8 minutes. Add more water if the sauce is too thick.
- Stir through the noodles. Sprinkle over the mozzarella and remaining spring onion.
- Cover the pan and cook for 2-3 minutes, or until the cheese has melted. Serve immediately, enjoy!
