Christmas Grilled Cheese Sandwich

This Christmas grilled cheese sandwich is filled with vegetarian turkey, brie, stuffing, and cranberry sauce. It is the perfect recipe for using up Christmas dinner or Thanksgiving leftovers for those people who just love the flavours of Christmas!

Ingredients:

To make this delicious Christmas grilled cheese sandwich you will need:

  • Vegan chicken pieces 
  • Rosemary 
  • Thyme 
  • Lemon juice
  • Mayonnaise
  • Mustard
  • Sourdough bread
  • Brie
  • Cranberry sauce
  • Sage and onion stuffing
  • Cheddar

How to make a Christmas grilled cheese sandwich

Firstly, make the vegan turkey. I used Vegetarian Butcher chicken-style chunks. If you are not veggie, feel free to skip this part and use leftover roast chicken or turkey.

Heat some olive oil over a medium heat in a medium frying pan. Tip in the chicken pieces and season with salt, pepper, rosemary, and thyme. Fry until the vegan chicken pieces are golden brown, tossing frequently.

Squeeze over some lemon juice and fry for a further minute. Take off the heat and set aside.

Now it’s time to assemble the sandwiches. Spread each slice of bread with mayonnaise and flip them over. Spread two of the slices with mustard.

Top the mustard with the sliced Brie, followed by the turkey, stuffing, and cranberry sauce. Finally, sprinkle over the grated Cheddar and top with the remaining slices of bread, mayonnaise sides facing out.

Heat a large frying pan over a medium heat and place the sandwiches into the pan. If the sandwiches are large, you can cook them separately.

Lastly, fry the sandwiches until golden brown on both sides – around 5-8 minutes. To help the cheese melt, you can add a splash of water to the pan and cover with a lid. This will create steam which will melt the cheese.

Serve the grilled cheese sandwiches straight away, enjoy!

What to put in a Christmas sandwich

A fully stuffed sandwich is the perfect way to use up Christmas dinner and Thanksgiving leftovers. Here are some more ideas of what to put in your Christmas sandwiches:

  • Bacon or pigs in blankets – there are lots of vegan bacon and sausage alternatives in supermarkets today. Why not make some veggie pigs in blankets to add to your sandwich?
  • Greens – to make these sandwiches a little healthier, why not add some greenery? I recommend adding a few roasted Brussel sprouts or some cavolo nero.
  • Switch up the cheese – instead of Brie and Cheddar, why not try adding in some different cheeses? For a stronger flavour you could replace the Brie with Camembert and the Cheddar with Gruyère. For a better cheese pull, add a little grated mozzarella.

Ingredients
  

Vegan Turkey
  • 160g/5⅔oz vegan chicken pieces you can skip this part and use leftover roast chicken or turkey, if you are not vegetarian
  • 1 tsp olive oil
  • salt and pepper
  • 1 tsp fresh rosemary finely chopped (or ½ tsp dried rosemary)
  • 1 tsp fresh thyme finely chopped (or ½ tsp dried thyme)
  • 1 tsp lemon juice
To assemble the sandwich
  • 2 tbsp mayonnaise
  • 2 tsp mustard
  • 4 large slices bread I used sourdough
  • 130g/4½oz brie thinly sliced
  • 4 tbsp cranberry sauce
  • cup sage and onion stuffing crumbled
  • cup Cheddar grated

Method
 

  1. Start by preparing your vegan 'turkey'. If you're not veggie, skip this part and use leftover roast chicken or turkey. Heat the olive oil in a medium frying pan over a medium heat. Add the vegan chicken pieces and season to taste with salt and pepper. Sprinkle over the rosemary and thyme and toss to coat.
  2. Fry until starting to turn golden brown, tossing often. Squeeze over the lemon juice and fry for a further minute. Remove from the heat and set aside. If the chunks are large, you can roughly chop them.
  3. Now is time to assemble the sandwich. Spread one side of each slice of bread with mayonnaise. Flip the bread over. Spread two slices of the bread with mustard and top each with the sliced Brie. Top the Brie with the turkey followed by the stuffing. Spoon over the cranberry sauce and sprinkle over the grated Cheddar.
  4. Top with the other two slices of bread, mayonnaise sides facing out.
  5. Heat a large frying pan over a medium heat. Add the sandwiches and fry until golden on both sides, around 5-8 minutes. If the sandwiches are large, cook them separately. To help the cheese melt, you can add a splash of water to the pan and cover it with a lid – this creates steam to melt the cheese. If the sandwiches are browning too fast, turn down the heat.
  6. Serve hot whilst the cheese is still melted, enjoy!
