Vegan Smash Gyoza (Dumpling Tacos)

These vegan smash gyoza (dumpling tacos) are inspired by the viral smash gyozas on TikTok. They are the perfect solution for people like me who do not have the dexterity (or sometimes patience) to neatly pleat dumplings.

How to make vegan smash gyoza (dumpling tacos)

Preparing the pickled vegetables

Firstly, prepare the pickled vegetables. This step is optional but these veggies add freshness and crunch to your dumpling tacos.

Tip the vegetables into a small bowl and add the rice vinegar, sugar, and salt. Mix together and set aside whilst you make the pork mix.

To a large mixing bowl add all of the pork mix ingredients. Stir together using your hands. The mixture will be wet at first but will come together after a minute or two of mixing.

Cooking the smash gyoza

Heat a splash of vegetable oil in a large frying pan. Add 3-4 heaped tablespoons of pork mix into the pan. Top each with a dumpling wrapper and smash down with a spatula.

Fry until the pork has browned before flipping. Fry for 30 seconds before adding a splash of water and covering with a lid. Steam for 4 minutes.

Continue to cook the smash gyoza in batches.

Dipping sauce

While you cook the remaining smash gyoza, make the dipping sauce.

In a small bowl combine together the sugar, soy sauce, water, chilli oil, vinegar, garlic, and sesame oil.

Finally, serve the smash gyozas hot with the pickled vegetables and dipping sauce.

Ingredients
  

  • 20 dumpling wrappers
  • vegetable oil for frying
'Pork' mixture
  • 375g/13oz Richmond meat-free sausages casing removed
  • 1 spring onion finely chopped
  • ¼ cup shredded cabbage
  • 1 tbsp shaoxing wine
  • 2 tsp sesame oil
  • ¼ tsp salt
  • ¼ tsp sugar
  • 1 garlic clove grated
  • 1 inch ginger grated
  • 2 tbsp light soy sauce
Pickled vegetables
  • 1 small carrot peeled and sliced sliced into matchstick sized pieces
  • 3 inches cucumber deseeded and sliced into matchstick sized pieces
  • 2 spring onions sliced into matchstick sized pieces
  • 1 tbsp rice vinegar
  • ¼ tsp sugar
  • pinch salt
Dipping sauce
  • 1 tsp sugar
  • 2 tbsp light soy sauce
  • 1 tbsp hot water
  • 1 tsp chilli oil optional
  • 1 tsp rice vinegar or Chinese black vinegar
  • 1 tsp minced garlic optional
  • ½ tsp sesame oil

Method
 

  1. Firstly, prepare the pickled vegetables. Add all of the vegetables to a bowl. Add the vinegar, sugar, and salt and toss together well. Set aside whilst you make the pork mixture.
  2. Add all of the ingredients for the pork mixture into a large bowl. Mix together with your hands until well combined. The mixture will be wet at first but should come together after a minute of mixing.
  3. Heat a splash of vegetable oil in a large pan over a medium heat. Add heaped tablespoons of pork mixture to the pan and top each with a dumpling wrapper. Use a spatula to flatten the meat. Depending on the size of your pan you will need to to cook these in batches of 3-5 at a time.
  4. Once the 'pork' has browned flip the smash gyozas over. heat for 30 seconds before adding a generous splash of water. Cover with a lid and allow to steam for 4 minutes. Continue to cook in batches until the gyoza are all cooked, keep the cooked smash gyoza warm by covering them with a plate.
  5. Whilst the smash dumplings are cooking, mix together the dipping sauce ingredients in a small bowl.
  6. Serve the smash dumplings topped with the pickled vegetables and dipping sauce.
