Cottage Cheese Toast

Cottage cheese toast with ajvar and avocado. This recipe couldn’t be simpler, but it is packed with protein and makes the perfect breakfast or snack. Spicy ajvar, a roasted pepper and aubergine dip, is what makes this toast extra special!

Ingredients

  • 1 slice sourdough bread
  • 1/2 an avocado 
  • 3 tbsp ajvar
  • 3 tbsp cottage cheese
  • 1/2 tsp mixed seeds, or of your choice

Method

Firstly, pop your sourdough in the toaster and toast according to personal preference.

Meanwhile, finely slice your avocado and flatten it slightly with side of your knife.

Once toasted leave the sourdough to cool slightly. Spread the ajvar onto the toast and top with the sliced avocado. Spoon over the cottage cheese and sprinkle over the seeds. Enjoy!

What is ajvar

Ajvar is a spicy roasted red pepper and aubergine dip. It is a staple of Balkan cuisine and adds a kick of flavour to otherwise slightly bland cottage cheese. I used Odysea ajvar.

Is cottage cheese on toast healthy

Cottage cheese is high in protein with around 11g of protein per 100g. It’s also a great source of calcium.

Serve it with sourdough toast to get the benefits of fermentation too.

I also like to top my cottage cheese toast with seeds for added nutrients.

  1. Firstly, toast your sourdough. Allow to cool slightly whilst you finely slice the avocado. Flatten the avocado slices slightly with the side of the knife.
  2. Spread the sourdough with the ajvar and top with the avocado. Spoon over the cottage cheese and sprinkle over the seeds. Enjoy!
