Ingredients for a crispy chicken tender sandwich

To make this sandwich, you will need:

  • 2 slices thick white bread
  • 4 frozen chicken tenders, I used vegan ones
  • 2 leaves little gem lettuce
  • Handful sliced pickled gherkins

Buffalo Burger Sauce

  • 2 tbsp mayonnaise
  • 1 tbsp Buffalo sauce
  • 1 tbsp ketchup
  • 2 tsp diced pickled gherkins
  • 1/2 tsp Dijon mustard
  • 1 pinch garlic granules
  • 1 pinch smoked paprika

How to make a crispy chicken tender sandwich

Firstly, cook your frozen chicken tenders following the packet instructions. I like to use the air fryer for an extra crispy finish.

Meanwhile, prepare the spicy Buffalo burger sauce. Simply combine all the sauce ingredients in a small bowl and mix well until smooth and fully blended.

Next, lightly toast your bread slices until they turn a pale golden colour.

Then, spread one slice generously with the Buffalo burger sauce. Layer on the pickled gherkins and crunchy lettuce.

After that, arrange the four crispy chicken tenders evenly on top of the lettuce.

Finally, slice the sandwich lengthways through the tenders, and enjoy!

  • Choose your favourite bread — I used toasted white bread, but a soft brioche bun works beautifully too.

Method
 

  1. Cook your chicken tenders according to packet instructions, I prefer to cook mine in the air fryer so they get extra crispy.
  2. Meanwhile add all of the sauce ingredients to a small bowl and mix well to combine.
  3. Lightly toast the bread.
  4. Spread one slice of bread with the sauce. Top with the pickles followed by the lettuce leaves. Arrange the crispy chicken tenders on top and top with the other slice of toast.
  5. Slice in half and enjoy!
