These crispy fries are loaded up with spicy Buffalo chicken pieces and a creamy blue cheese sauce. They make the perfect sharing plate for match day or film nights!

Buffalo blue cheese fries: ingredients
To make these fries you will need:
- 500g frozen French fries
- Fresh parsley, chives or spring onion to serve
- Salt
Blue cheese sauce
- 25g butter
- 1 tbsp flour
- 125ml milk
- 60g blue cheese, e.g. stilton
- Garlic granules, salt and pepper to taste
Buffalo chicken
- 1 tsp vegetable oil
- 160g chicken pieces, I used vegan chicken
- 3 tbsp buffalo sauce

How to make Buffalo fries
Firstly, preheat the oven and cook the fries according to their packet instructions.
Meanwhile, prepare the blue cheese sauce and chicken. Melt the butter in a small sauce pan over a low-medium heat. Whisk in the flour and cook for 30 seconds. Gradually whisk in the milk until thickened before stirring through the cheese.
Once the cheese has melted remove from the heat and season to taste with garlic granules, salt, and pepper.
Now, prepare the Buffalo chicken. Heat the oil over a medium-high heat in a frying pan. Add the chicken pieces and toss until cooked through and starting to turn golden brown. Add the Buffalo sauce and cook for a further 2 minutes. If any oil separates from the sauce carefully drain it off.
Once the fries are cooked, season them with salt and toss well.
Add the fries to a large serving bowl. Top with the chicken and drizzle over the cheese sauce. Drizzle over a little more Buffalo sauce before sprinkling over fresh parsley, chives, or spring onion.
