Buffalo Blue Cheese Fries

Ingredients
  

  • 500g frozen French fries
  • fresh parsley, chives or spring onion to serve
  • salt
Blue cheese sauce
  • 25g butter
  • 1 tbsp flour
  • 125ml milk
  • 60g blue cheese e.g. stilton
  • garlic granules, salt and pepper to taste
Buffalo chicken
  • 1 tsp vegetable oil
  • 160g chicken pieces I used vegan chicken
  • 3 tbsp buffalo sauce

Method
 

  1. Preheat the oven and cook the fries according to packet instructions. Whilst the fries cook, prepare the blue cheese sauce and chicken.
  2. Melt the butter in a small saucepan over a low-medium heat and stir through the flour. Cook for 30 seconds. Gradually whisk in the milk. Add the blue cheese and stir until melted. Remove from the heat and season to taste with garlic granules, salt, and pepper. Pour into to a small bowl and set aside.
  3. Heat the oil in a frying pan over a medium-high heat. Add the chicken and fry until cooked through and turning golden brown. Add the buffalo sauce and cook for a further 2 minutes. If any oil separates from the sauce, carefully drain it off.
  4. Once cooked, season the fries with salt and toss well. Add the fries to a large serving bowl. Top with the chicken and cheese sauce. Drizzle over a little more buffalo sauce and sprinkle with parsley, chives, or spring onion.
