Chocolate Oreo Stuffed Cookies

Chocolate Oreo stuffed cookies: ingredients

To make these cookies you will need:

  • Unsalted butter
  • Light brown muscovado sugar
  • Caster sugar
  • Vanilla extract
  • Egg
  • Plain flour
  • Bicarbonate of soda
  • Cocoa powder
  • Salt
  • Dark chocolate chunks
  • One pack of brownie Oreos

How to make Chocolate Oreo Cookies

Firstly, preheat the oven to 180℃/160℃ fan (350℉/320℉).

Add the butter and both sugars to a large mixing bowl. Beat with an electric hand mixer until light and creamy. Add the vanilla and egg and beat on a medium speed for a further minute.

Add the flour, bicarbonate of soda, cocoa powder, and salt. Fold in with a rubber spatula until just combined.

Add the crushed Oreos and chocolate chunks. Stir through until evenly distributed.

Line two large baking trays with baking paper.

Use an ice cream scoop to scoop a spoonful of dough onto the baking paper. Press a dip into the dough ball with two fingers and press in a whole Oreo. Top with another half scoop of cookie dough and use your fingers to ensure the dough covers the Oreo.

Repeat until you have 8 evenly sized cookies, ensure they are spaced well apart on the baking trays.

Bake for 12 minutes. Allow to cool for 10 minutes on the trays before moving to a wire rack to cool completely.

  • 90g/½ cup light brown muscovado sugar
  • 50g/¼ cup caster sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 170g/1¼ cups plain flour
  • ½ tsp bicarbonate of soda
  • 40g/½ cup cocoa powder
  • ¼ tsp salt
  • 180g dark chocolate chunks or half milk and half dark chunks
  • 154g pack brownie Oreos or Oreos of choice 8 reserved whole, the remaining gently crushed

Instructions

  • Tip in the flour, bicarbonate of soda, cocoa powder, and salt. Stir through with a rubber spatula until just combined.
  • Tip in the chocolate chunks and crushed Oreos, stir until spread evenly through the dough.
  • Line two large baking trays with baking paper.
  • Using an ice cream scoop, scoop a spoonful of cookie dough onto the baking paper. Make a dip in the dough using two fingers and press in a whole Oreo. Top with another half scoop of cookie dough. Press the dough around the Oreo so it's completely covered.
  • Repeat until you have 8 evenly sized cookies. Space well apart on the baking trays and bake for 12 minutes. Leave to cool for 10 minutes on the trays before moving to a wire rack to cool completely.
