Vegetarian Greggs Festive Bake

Unfortunately Greggs doesn’t keep their festive treats in store all year round, so I’ve created a delicious copycat version of a vegetarian Greggs Festive bake.

These pastries are butter, flaky and oozing with flavourful Christmassy goodness. Best of all, you can make them all year round!

Ingredients

To make these copycat Greggs festive bake pastries, you will need:

  • Butter
  • Flour
  • Milk
  • Ready rolled puff pastry
  • Cooked vegetarian chicken 
  • Vegan bacon 
  • Vegetarian sage and onion stuffing 
  • Cranberry sauce
  • Bread crumbs
  • Vegetarian Parmesan
  • Dried sage

In place of cooked chicken, I have used vegetarian chicken. I used the Quorn vegetarian roast, this has a delicious flavour reminiscent of a roast chicken. However, it takes around an hour to cook. To save time, I recommend using Vegetarian Butcher chicken pieces instead.

You’ll need to make a white sauce to make these festive bakes. To make things quicker, feel free to use jarred white sauce!

How to make a Greggs vegetarian festive bake

Firstly, preheat the oven to 200℃/180℃ fan.

Melt the butter in a saucepan over a medium heat. Add the flour and mix until combined, heating for around 30 seconds.

Slowly add the milk, whisking constantly until it has all been incorporated. Continue to heat the sauce gently until it has thickened, whisking often. Season to taste with salt and pepper, remove from the heat and set aside.

Unroll one of the pastry sheets and slice into 4 quarters.

Arrange the chicken pieces, bacon, and stuffing onto each quarter leaving 2cm, clear at the edge of each rectangle.

Dot one tablespoon of cranberry sauce over each rectangle before spooning over the white sauce.

Unroll the second pastry sheet and slice into quarters. Lay each piece of pastry over the fillings and press down the edges, crimping them with a fork to seal.

Place the pastries onto lined baking trays and brush each with milk.

In a small bowl combine together the breadcrumbs, Parmesan, and sage. Sprinkle over the pastries.

Bake for 25-30 minutes until the pastry is golden and puffed up.

Ingredients
  

  • 1 tbsp butter
  • 1 tbsp flour
  • 210ml/0.9 cups milk
  • salt and pepper to taste
  • 2x 320g/11¼oz ready rolled puff pastry
  • 160g/5⅔oz cooked vegetarian chicken roughly chopped (cooked weight)
  • 150g/5⅓oz fried sliced vegan bacon (cooked weight)
  • 80g/2¾oz cooked vegetarian sage and onion stuffing roughly chopped
  • 3 tbsp cranberry sauce
  • tbsp bread crumbs
  • 2 tbsp Vegetarian Parmesan grated
  • ¾ tsp dried sage

Method
 

  1. Preheat the oven to 200℃/180℃ fan (390℉/355℉).
  2. Melt the butter in a small saucepan over a medium heat. Once melted, add the flour and mix to combine. Heat for 30 seconds, whisking constantly. Slowly pour in the milk whisking constantly until combined. Continue whisking until the sauce has thickened. Season to taste with salt and pepper. Remove from the heat and set aside to cool.
  3. Unroll one of the pastry sheets and slice into 4 quarters.
  4. Arrange the the veggie chicken pieces, bacon and stuffing on top of each rectangle leaving 2cm clear at the edges.
  5. Dot 1 tbsp of cranberry sauce over each pile of fillings before spooning over the white sauce.
  6. Unroll the second sheet of pastry and slice into 4 rectangles. Lay a pastry rectangle over the fillings. Press the edges of the pastry to secure the fillings and use a fork to seal the pastry.
  7. Place the pastry pockets onto lined baking trays and brush the tops with milk. Mix together the breadcrumbs, Parmesan, and sage and sprinkle over the pastries.
  8. Bake for 25-30 minutes until the pastry is golden and puffed up.
