Chilli Oil Noodles

Chilli Oil Noodles – instant ramen noodles transformed with a homemade spicy chilli oil. This ramen hack has been blowing up on TikTok, and it’s easy to see why – it’s absolutely delicious. Simply take your favourite brand of instant ramen and elevate it with a bold and flavourful spicy garlic hot oil that’s guaranteed to make every bite irresistible!

Ingredients

To make these noodles you will need:

  • Your favourite ramen, I recommend Shin ramyun, or Jin ramen
  • Sesame seeds
  • White pepper
  • Spring onion 
  • Garlic
  • Sugar
  • Chilli flakes
  • Vegetable oil
  • Sesame oil
  • Dark soy sauce
  • Light soy sauce
  • Vinegar

These chilli oil noodles are super easy to make, and don’t worry if you don’t have all the ingredients. The dark soy sauce, white pepper, and sesame seeds can be left out if you don’t have them!

How to make chilli oil noodles

Firstly, make the hot oil by combining together the sesame seeds, white pepper, the white part of the spring onion, garlic, sugar, chilli flakes and 1 tsp of the ramen seasoning in a heat-proof bowl. For extra flavour, feel free to add more of the seasoning packet.

Heat the vegetable oil in a saucepan until very hot and pour over the chilli oil ingredients. They will sizzle and become fragrant. Then, stir through the sesame oil, soy sauces, and vinegar.

Cook the ramen noodles for 1 minute less than recommended by the packet instructions. This will ensure they stay deliciously chewy and bouncy.

Finally, stir the noodles through the chilli oil and sprinkle with the remaining spring onions.

Which noodles for chilli oil noodles?

I chose to use instant ramen for my chilli oil noodles. Using instant ramen means you can add some of the seasoning packet to the chilli oil for extra flavour. However, you can use any noodles you like!

I recommend using ho fun or udon noodles, or you could even make your own homemade biang biang noodles! Simply replace the ramen seasoning with some extra chilli flakes.

Tips and tricks

Here are some tips and tricks to make the BEST chilli oil noodles:

  • Do not overcook your noodles – I always cook my noodles for at least a minute less than suggested by the packet instructions. This ensures they stay chewy and don’t fall apart.
  • Use both dark and light soy sauce – the light soy sauce will bring flavour whilst dark soy sauce will bring extra sweetness and add colour to your noodles.
  • Add coriander for extra flavour – if you’re not a coriander-phobe then sprinkle over some fresh coriander for extra flavour.
  • Add a fried egg – I recommend topping your noodles with a fried egg as the creamy egg yolk is delicious mixed in with the noodles.

Ingredients
  

  • 1 pack of your favourite ramen I recommend Shin ramen, or Jin ramen
  • 2 tsp sesame seeds
  • tsp white pepper
  • 1 finely chopped spring onion white and green part separated
  • 2 garlic cloves minced
  • 1 tsp sugar
  • ½ tsp chilli flakes or gochugaru
  • 3 tbsp vegetable oil
  • ½ tsp sesame oil
  • 1 tsp dark soy sauce
  • 1 tsp light soy sauce
  • 1 tsp rice vinegar or Chinese black vinegar

Method
 

  1. To a heat-proof ramen bowl add in the sesame seeds, white pepper, spring onion, sugar, chilli flakes, and 1 tsp of the ramen seasoning.
  2. Cook the ramen for 1 minute less than recommended by the packet instructions. Drain. Meanwhile heat the vegetable oil until very hot.
  3. Pour the hot oil into the ramen bowl. Stir through the sesame oil, soy sauces, and vinegar. Stir through the noodles.
  4. Serve sprinkled with the green spring onion, and a fried egg if you like. Enjoy!
