Frozen Watermelon Cocktail

This frozen watermelon cocktail is my new favourite summer drink. By using frozen watermelon this tastes like a delicious frozen alcoholic slushie. The flavours of mint and lime give this drink a sophisticated twist.

Add a sugar lime rim to your glasses and a couple of mint leaves and lime wedges for garnish, and you have the perfect party cocktails to impress your guests.

Frozen strawberry and watermelon cocktails

Ingredients

Watermelon – to choose the best watermelon there are a few rules you can follow. The sweetest watermelons will have an orange coloured spot and a large amount of webbing. Watermelons which are round and dull in colour are also more likely to be sweet.

Frozen watermelon can be difficult to blend. I would recommend using a high power blender, such as this Ninja blender.

Strawberries – there aren’t many flavour combinations better than watermelon and strawberries. For the best flavour, use the best quality strawberries you can find.

Vodka – for this recipe you can use any vodka. The delicious flavours of the watermelon, strawberries, and lime will mask the taste of the alcohol.

Lime juice – lime is one my favourite flavours and it pairs so well with the watermelon and strawberry.

Simple syrup – simple syrup is commonly used to make cocktails and is a sugar syrup you can easily make at home. In a saucepan combine granulated sugar with the same volume of water. Heat gently, stirring until the sugar has dissolved. Set aside to cool.

How do you put sugar around the rim of a glass?

I made a sugar and lime mix to rim my cocktail glasses with. Simply combine 2 tablespoons of sugar with 2 teaspoons of lime zest. Ideally, you should use sparkling or sanding sugar for the best rim. However, I used granulated and this worked too.

Use a wedge of lime to moisten the rims of the cocktail glasses. Tip the sugar mix onto a plate. Invert the glass and dip into the sugar, rotating until the whole rim is evenly coated.

Frozen watermelon and strawberry vodka slushies with lime. The perfect frozen summer cocktail.

Ingredients
  

  • 4 cups frozen seedless watermelon cubes*
  • 2 cups strawberries
  • 180ml/6oz vodka
  • 90ml/3oz lime juice
  • 60ml/2oz simple syrup see notes to make this yourself**
  • mint leaves to garnish, optional
  • lime wedges to garnish, optional
Sugar rim, optional
  • 2 tbsp sugar granulated, but ideally sparkling or sanding sugar
  • 2 tsp lime zest
  • lime wedge

Method
 

  1. Tip all of the cocktail ingredients, excluding the mint and lime wedges, into a high speed blender. Blend until smooth.
  2. If making a sugar rim, combine the sugar and lime zest and tip onto a small plate. Rub the lime wedge over the rim of each glass. Invert each glass and dip into the sugar, rotating back and forth until the whole rim is coated.
  3. Pour the cocktail into glasses and serve garnished with a lime wedge and mint leaves.

Notes

*To make your own frozen watermelon simply line a baking tray with baking parchment. Slice your watermelon into 1.5cm cubes. Arrange in 1 layer on the baking sheet. Freeze for at least 2 hours. 
**To make a sugar syrup at home add equal volumes of granulated sugar and water to a saucepan. Heat gently and stir until the sugar has dissolved. Set aside to cool.
