Method
- Tip all of the cocktail ingredients, excluding the mint and lime wedges, into a high speed blender. Blend until smooth.
- If making a sugar rim, combine the sugar and lime zest and tip onto a small plate. Rub the lime wedge over the rim of each glass. Invert each glass and dip into the sugar, rotating back and forth until the whole rim is coated.
- Pour the cocktail into glasses and serve garnished with a lime wedge and mint leaves.
Notes
*To make your own frozen watermelon simply line a baking tray with baking parchment. Slice your watermelon into 1.5cm cubes. Arrange in 1 layer on the baking sheet. Freeze for at least 2 hours.
**To make a sugar syrup at home add equal volumes of granulated sugar and water to a saucepan. Heat gently and stir until the sugar has dissolved. Set aside to cool.
