Frozen Watermelon Cocktail

Frozen watermelon and strawberry vodka slushies with lime. The perfect frozen summer cocktail.

Ingredients
  

  • 4 cups frozen seedless watermelon cubes*
  • 2 cups strawberries
  • 180ml/6oz vodka
  • 90ml/3oz lime juice
  • 60ml/2oz simple syrup see notes to make this yourself**
  • mint leaves to garnish, optional
  • lime wedges to garnish, optional
Sugar rim, optional
  • 2 tbsp sugar granulated, but ideally sparkling or sanding sugar
  • 2 tsp lime zest
  • lime wedge

Method
 

  1. Tip all of the cocktail ingredients, excluding the mint and lime wedges, into a high speed blender. Blend until smooth.
  2. If making a sugar rim, combine the sugar and lime zest and tip onto a small plate. Rub the lime wedge over the rim of each glass. Invert each glass and dip into the sugar, rotating back and forth until the whole rim is coated.
  3. Pour the cocktail into glasses and serve garnished with a lime wedge and mint leaves.

Notes

*To make your own frozen watermelon simply line a baking tray with baking parchment. Slice your watermelon into 1.5cm cubes. Arrange in 1 layer on the baking sheet. Freeze for at least 2 hours. 
**To make a sugar syrup at home add equal volumes of granulated sugar and water to a saucepan. Heat gently and stir until the sugar has dissolved. Set aside to cool.
