Algerian sauce, or sauce Algérienne, is a harissa mayonnaise which tastes amazing with kebabs or French tacos. You can often find it served in Algeria, Tunisia, Morocco, Switzerland, France, and Belgium. It’s tangy and spicy and easy to make at home!
What is Algerian sauce?
Algerian sauce is a spicy harissa mayo made using the following ingredients:
- Onion, finely chopped
- Fresh coriander, finely chopped
- Garlic, minced
- Mayonnaise
- Lemon juice
- Harissa paste
- Tomato purée
- Ground cumin
- Sugar
How to make Algerian sauce (sauce Algérienne)
Firstly, finely chop your onions and coriander, and mince your garlic.
Then, simply mix everything together in a bowl and your sauce is ready to eat.
You can keep your sauce in an airtight container in the fridge for up to 10 days.
What to eat with Algerian sauce
Algerian sauce tastes delicious served with French tacos, kebabs, fries, wedges, or burgers. There are no rules, enjoy it with whatever you please!

Where is Algerian sauce from?
Algerian sauce is found in many countries in Europe and North Africa. However, its origin is debated. Most agree that it was first created in Northern France and Belgium.
How to make Algerian sauce healthier
To make this sauce lighter, replace some or all of the mayonnaise with plain natural or Greek yoghurt. This will still taste delicious in kebabs.
Expert tip
Use a good quality harissa sauce for the best results. I used the Belazu rose harissa paste.

Ingredients
- 3 tbsp white or red onion very finely chopped
- 1 tbsp fresh coriander chopped
- 1 garlic clove crushed
- ½ cup mayonnaise
- 1 tbsp lemon juice
