Goat’s Cheese and Caramelised Onion Filo Parcels

These goat’s cheese and caramelised onion filo parcels are the perfect vegetarian-friendly finger food. Made using filo pastry these bite-size canapés are not to heavy and are perfect served with cocktails.

Goat’s cheese and caramelised onion filo parcels: ingredients

These filo parcels are easy to make and only require a few simple ingredients:

  • Filo pastry
  • Soft goat’s cheese
  • Butter
  • Olive oil
  • Red onions 
  • Brown sugar
  • Balsamic vinegar
  • Fresh thyme leaves

How to make goat’s cheese and caramelised onion filo parcels

Firstly, make the caramelised red onions. In a large pan add your oil and heat over a medium heat. Add the onions, stir well and turn the heat to low. Fry for 30 minutes, stirring occasionally.

Then, add the brown sugar, balsamic vinegar, and fresh thyme. Fry for a further 20-30 minutes until the onions are nicely caramelised, stirring occasionally. Remove from the heat and set aside to cool.

Preheat the oven to 190℃/170℃ fan (375℉/340℉) while you make the pastries.

Take your filo squares and cover them with a kitchen towel to prevent them from drying out. Brush 3 squares with melted butter and arrange them on top of each other to create a 12-pointed star.

Place a tablespoon of caramelised onions into the centre of the star and top with a piece of goat’s cheese. Fold in the edges of the pastry around the filling and twist to create a parcel shape.

Repeat with the remaining ingredients until you have 14 parcels. Arrange the pastries on a lined baking tray and brush each one with a little more melted butter. Bake for 22-24 minutes until golden. These pastries are best enjoyed on the day they are made.

Ingredients
  

  • ~5 sheets filo pastry sliced into 42 squares approximately 10x10cm
  • 125g/4½oz soft goat's cheese
  • 4 tbsp melted butter
Caramelised onion
  • 2 tbsp olive oil
  • 3 medium red onions finely sliced
  • 1 tbsp brown sugar
  • 2 tsp balsamic vinegar
  • 1 tsp fresh thyme leaves

Method
 

  1. Start by preparing the caramelised onions. Heat the olive oil over a medium heat in a large frying pan. Add the sliced onion. Stir well and lower the heat. Fry for 30 minutes, stirring occasionally.
  2. Add the sugar, balsamic vinegar, and thyme leaves. Fry for a further 20-30 minutes until the onions are nicely caramelised, stirring occasionally. Remove from the heat and set aside to cool.
  3. Preheat the oven to 190℃/170℃ fan (375℉/340℉).
  4. Take your filo pastry squares and cover them with a tea towel to prevent them from drying out. Take three squares of filo pastry and brush them with melted butter. Arrange the squares on top of each other to create a 12 pointed star.
  5. Place a tablespoon of caramelised onions in the centre of the star and top with a slice (1/14th) of the goat's cheese. Fold the pastry into the centre and twist it together to create a parcel shape. Repeat with the remaining ingredients until you have 14 parcels.
  6. Arrange the parcels on a lined baking tray. Brush each parcel with a little more melted butter.
  7. Bake for 22-24 minutes until the pastry is golden brown. These taste best eaten on the day they are made.
