Creamy Garlic Tomato Pasta

This is the best creamy garlic tomato pasta recipe. The creamy sauce is made using sweet roasted cherry tomatoes, garlic, double cream, and Parmesan. This recipe is simple to make and requires minimal effort, making it the perfect midweek dinner!

Creamy garlic tomato pasta: ingredients

This recipe requires just 9 ingredients:

  • Cherry tomatoes
  • Fennel seeds
  • Rosemary
  • Olive oil
  • Garlic
  • Double cream
  • Fresh basil
  • Vegetarian Parmesan
  • Linguine, or your favourite pasta shape

How to make creamy garlic tomato pasta:

Firstly, roast your cherry tomatoes and garlic. Season them with fennel seeds, rosemary, salt, and freshly ground black pepper. Drizzle with olive oil and toss to coat.

Cook the tomatoes in an oven preheated to 200℃ (180℃ fan) for 20-25 minutes until they are well roasted.

Meanwhile, bring a large pot of salted water to the boil. Cook the pasta until al dente. Reserve some of the pasta water before draining and returning to the pot.

Set a few tomatoes aside for garnish. Then, add the remaining tomatoes and garlic into a blender along with the cream, basil leaves, and Parmesan. Blend until creamy and smooth.

Add the sauce to the pasta and toss together over a low heat. Keep adding splashes of pasta water until a glossy sauce forms.

Finally, serve with the reserved tomatoes, some more fresh basil leaves, and grated Parmesan.

Ingredients
  

  • 2 cups cherry tomatoes
  • 1 tsp fennel seeds
  • 1 sprig rosemary
  • tbsp extra virgin olive oil
  • 7 garlic cloves peeled
  • ¼ cup double cream
  • 10 fresh basil leaves plus extra for garnish
  • cup vegetarian Parmesan grated, plus extra for garnish
  • salt and pepper
  • 185g/6½oz dried linguine

Method
 

  1. Preheat the oven to 200℃/180℃ fan (390℉/355℉).
  2. Add the tomatoes and garlic to a roasting dish. Sprinkle with the fennel seeds and rosemary. Drizzle over the olive oil and season with salt and pepper. Toss to combine.
  3. Cook for 20-25 minutes until the the tomatoes are well roasted.
  4. Whilst the tomatoes cook, bring a large pot of salted water to a boil. Add the linguine to the water and cook until al dente. Reserve some of the pasta water before draining and returning to the pot.
  5. Set aside 2 tbsp of the roasted tomatoes for garnish. Add the remaining tomatoes and garlic to a blender. Pour in the remaining liquids from the roasting dish.
  6. Add in the cream, basil, and Parmesan, and blend until smooth.
  7. Add sauce to the pasta and heat over a low heat. Stir to combine, adding splashes of pasta water until a smooth glossy sauce forms.
  8. Divide the pasta into 2 bowls and garnish with the reserved tomatoes, some torn fresh basil leaves, and an extra grating of Parmesan.
