Spicy Ramen Spring Rolls with Cheese

These spicy ramen spring rolls with cheese are the perfect snack for any occasion. They are stuffed with Korean carbonara buldak noodles, nori, and American cheese and pan-fried until crispy. The spring rolls are served with a delicious spicy mayonnaise dipping sauce.

Spicy ramen spring rolls with cheese: ingredients

These spicy noodle spring rolls require just 4 ingredients:

  • Rice paper 
  • Samyang carbonara noodles
  • American cheese
  • Nori

If you can find it, I recommend using kewpie Japanese mayo for the best taste!

How to make spicy noodle spring rolls

Firstly, cook the noodles. I recommend boiling them for 1 minute less than recommended by the packet instructions. This will keep them deliciously chewy.

Drain the noodles and tip them in a bowl. Roughly chop with scissors before adding in the seasoning packets. Mix until fully combined.

Then, dip your rice paper into water for 2 seconds. Lay onto a plate. Arrange the the cheese and nori pieces as shown in the picture below.

After that, top with one fifth of the noodles. Fold the bottom of the rice paper over the noodles, and tuck in the sides. Fold over to close the spring rolls. Repeat with the remaining ingredients.

Heat the vegetable oil in a pan. Pan fry the spring rolls until golden and crispy on both sides, around 5 minutes.

Finally, serve the crispy spring rolls with the spicy mayo.

I used buldak carbonara noodles. You can use any of the Samyang buldak fire noodles. These are my favourite noodles to use:

Where to buy rice paper:

I used 22cm circular rice paper wrappers to make my spring rolls. These are easy to find in most Asian supermarkets. If not, you can buy rice paper on Amazon.

Pro-tips:

  1. Do not dip the rice paper in water for too long. So long as the rice paper has been fully submerged it will soften quickly. Dipping it for too long may cause it to fall apart.
  2. For extra crunch, double wrap the spring rolls. Double wrapping the spring rolls will also prevent them from tearing.
  3. Chop up the noodles with scissors before adding the seasoning packets. This will make it easier to make the spring rolls.

Do you need to fry fire noodle spring rolls?

If you prefer, you can enjoy these spring rolls without frying them.

Ingredients
  

  • 5 rice paper wrappers 22cm across
  • 1 pack Samyang noodles I used carbonara, these are not vegerarian
  • 10 pieces American cheese sliced into 1.5cm x 5cm pieces
  • 10 pieces Nori cut into 1.5cm x 5cm pieces
  • 2 tsp vegetable oil
  • 2 tbsp mayonnaise
  • 1 tsp buldak sauce

Method
 

  1. Cook the noodles for 1 minute less than described on the packet instructions. Drain and tip into a bowl.
  2. Roughly chop the noodles with scissors. Add the seasoning packets and stir to combine.
  3. Fill a large shallow bowl or plate with water. Dunk the rice paper for 2 seconds. Place the rice paper onto a plate.
  4. Arrange 2 slices of cheese, and 2 slices in stripes in the the centre of the rice paper sheet.

  5. Top with 1/5 of the noodles. Fold the rice paper over the noodles and tuck in the sides. Roll over the spring roll to seal it.

  6. Repeat with the remaining ingredients to make 5 spring rolls.
  7. Add the vegetable oil to a large frying pan and heat over a medium-high heat. Fry the rice paper rolls until golden and crispy on both sides, around 5 minutes.
  8. Mix the mayonnaise and buldak sauce in a small bowl and serve with the spring rolls. Enjoy!
