Cook the noodles for 1 minute less than described on the packet instructions. Drain and tip into a bowl.
Roughly chop the noodles with scissors. Add the seasoning packets and stir to combine.
Fill a large shallow bowl or plate with water. Dunk the rice paper for 2 seconds. Place the rice paper onto a plate.
Arrange 2 slices of cheese, and 2 slices in stripes in the the centre of the rice paper sheet.
Top with 1/5 of the noodles. Fold the rice paper over the noodles and tuck in the sides. Roll over the spring roll to seal it.
Repeat with the remaining ingredients to make 5 spring rolls.
Add the vegetable oil to a large frying pan and heat over a medium-high heat. Fry the rice paper rolls until golden and crispy on both sides, around 5 minutes.
Mix the mayonnaise and buldak sauce in a small bowl and serve with the spring rolls. Enjoy!
