Ingredients

  • 270 –300g vegan pork-style sausages removed from their casings
  • 2 spring onions finely sliced (green part only)
  • 1 large garlic clove minced
  • 2 tsp minced ginger
  • ½ tbsp soy sauce
  • ½ tbsp mirin
  • 2 tsp sugar
  • 4 circular sheets of rice paper
  • Oil for air frying

Method

  1. Start by making the vegan dumpling filling. Add the vegan sausage meat, garlic, ginger, soy sauce, mirin, spring onions and sugar to a bowl. Mix until everything is well combined.
  2. Quickly dip a sheet of rice paper in water and lay it on a plate. Dollop one quarter of the vegan pork-style filling around 2cm from the bottom of the rice paper, shaping it into a log and leaving around 1cm clear on each side. Fold in the sides, then roll everything up into a log. Set aside and repeat with the remaining rice paper and filling.
  3. Use clean kitchen scissors to snip the logs into bite-size pieces.
  4. Arrange the rice paper dumpling bites in the air fryer, making sure they aren't touching. Brush or spray generously with oil, then air fry at 200°C for 13–15 minutes until golden and crispy, flipping halfway through.
  5. Serve immediately with your favourite dipping sauce and a generous drizzle of chilli oil, if you fancy.
