Add the mozzarella, Cheddar, cream cheese, and spring onions to a medium-sized bowl. Mix well with a fork.
Crack the eggs into another medium-sized bowl. Add the milk and mixed herbs before seasoning with salt and pepper. Whisk together with a fork until well combined.
Remove the crusts from each slice of bread. Spread 3 of the slices with one third of the cheese mixture each. Top with the remaining bread slices. Slice each sandwich into 3 finger sandwiches.
Heat a little oil in a large frying pan over a medium heat. Dunk a sandwich into the egg mix and coat well before adding it straight into the pan (dunk them one at a time and do not allow them to get soggy). Cook the French toast sticks in batches, flipping the, until they are golden all over. Drain on kitchen paper.
Serve immediately with your choice of condiments.
