For the beans
- 1 x 570g jar butter beans, bean stock reserved (I used Bold Bean Queen Butter Beans)
- 1 small onion or shallot, finely diced
- 3 cloves garlic, minced
- 150ml single cream
- Olive oil
- Zest + juice of one lemon
- Black pepper, salt
For the garlic breadcrumbs
- 30g garlic & herb butter (I used All Things Butter)
- 40g breadcrumbs, panko or fresh
- Pinch of salt

Method
Step 1: Make the Crispy Breadcrumbs
Melt the garlic & herb butter in a frying pan over medium-low heat. Add the breadcrumbs with a pinch of salt, stirring constantly until golden and fragrant, about 3–5 minutes. Tip onto a plate immediately to stop them browning further.
Step 2: Cook the Onion and Garlic
In a wide pan, heat a splash of olive oil. Fry the onion or shallot with a pinch of salt until soft and sweet, around 5–7 minutes. Add the garlic and cook for a further 30 seconds until fragrant.
Step 3: Make the Creamy Sauce
Pour in the single cream and a few spoonfuls of the reserved bean stock. Stir in black pepper and lemon zest. Simmer gently for 2–3 minutes.
Step 4: Add the Butter Beans
Gently stir in the butter beans and simmer for 5–6 minutes until the sauce is glossy and thickened, adding more bean stock if necessary to reach your preferred consistency.
Step 5: Serve
Spoon the beans onto plates and sprinkle generously with the crispy breadcrumbs. Finish with a squeeze of lemon juice and a crack of black pepper. Serve alongside roasted vegetables, grilled mains, or as part of a sharing spread for maximum indulgence.
