Creamy hummus pasta with spinach, sun-dried tomatoes, and fresh basil. Ready in just 20 minutes, this is the perfect speedy pasta which is high in plant protein and fibre. This pasta is vegan-friendly and deliciously comforting!
Each serving contains 20g of protein and 8g of fibre.

Ingredients
- Onion
- Sun-dried tomatoes
- Spinach
- Fresh basil
- Hummus
- Lemon
- Pasta
- Salt, pepper, and chilli flakes to taste

How to make hummus pasta
Firstly, bring a large pot of salted water to the boil. Tip in your pasta and cook until al dente. Drain, reserving a cupful of pasta water.
Meanwhile, heat the oil in a large frying pan over a medium heat. Tip in the onion and fry until starting to brown. Stir through the sun-dried tomatoes and cook for a further minute.
Stir in the hummus, spinach, and a splash of pasta water until the spinach has wilted. Add in the pasta, fresh basil, and half of the lemon juice. Stir until well coated, adding another splash of pasta water, if necessary
Finally, season to taste with salt, pepper, and chilli flakes. Serve with the remaining lemon juice squeezed over.
