What are Braaibroodjies
Braaibroodjies are South African grilled cheese sandwiches filled with chutney, tomato, onion and cheese. These gooey, golden brown sandwiches are traditionally served as a side dish at a South African barbecue and are cooked over the grill. ‘Braai’ is the Afrikaans word for barbecue

How to make Braaibroodjies
Firstly, butter two slices of bread and flip. Spread with your chutney of choice. Traditionally, these sandwiches are made with Mrs Ball’s chutney. This is a peach and apricot chutney. If you can’t find this, you can use apricot jam or mango chutney.
Secondly, top one slice of bread with your tomatoes, onions and cheese. I topped mine with a slice of Emmental followed by sliced tomato, onion and a sprinkle of grated Cheddar.

Top with the other slice of bread, butter side facing out.
Finally, it is time to cook your sandwiches. Traditionally you should cook these over a barbecue, or braai, flipping them until they a golden brown on both sides and the cheese has melted.
Alternatively, if you do not have a barbecue, you can cook them under a grill oven. Once again, flipping until golden brown on both sides.

Grilled cheese in a pan
Although not traditional, you could cook these sandwiches in a pan. Fry over a medium heat, flipping until golden brown on both sides. You may want to cover the pan with a lid and add a splash of water. This will create steam and help to melt the cheese.

Method
- Butter one side of each piece of bread. Flip over the bread. Spread each slice with the chutney.
- Top 2 of the bread slices with the Emmental cheese. Divide the tomatoes and onion on top of the Emmental. Sprinkle over the Cheddar cheese.
- Top with the other bread slices, butter side facing outwards.
- Cook them over a barbecue over low heat coals or gas flame until golden brown. Flip them often to avoid burning. Alternatively, if you do not have a barbecue, place them under a grill set to a medium heat. Grill until golden brown on each side, flipping often.
