These flaky puff pastry vegan sausage rolls are flavoured with caramelised onions, apple and sage. The delicious sweetness from the caramelised onions and apple perfectly balance with the savoury vegan sausage meat. I used vegan sausage meat to make these rolls, my favourite brand to use is Richmond. Most supermarket puff pastry is also actually dairy-free and vegan-friendly!

Vegan sausage rolls: Ingredients
These sausage rolls have 7 main ingredients:
- Ready-rolled vegan puff pastry
- Vegan sausages
- Sage
- Apple
- Onions
- Soya milk
- Sesame seeds

How to make vegan sausage rolls
To make these sausage rolls you will first need to caramelise your onions and apples. Finely dice your onions and add them into a pan with olive oil and a little salt and sugar. Cook them for 30 minutes.
After 30 minutes, add in the diced apples. Continue cooking everything for a further 20-30 minutes, or until the onions are golden brown and deliciously caramelised.
Once your apples and onions have cooled, combine your sausage meat, sage, caramelised onions and apples together in a bowl. Season with salt and pepper.
Next, lay out your puff pastry sheet. Shape your sausage mix into a large log shape, running a couple of inches from the edge, down the length of the pastry.
Brush the shorter edge with soya milk and fold the wider edge over the sausage meat. Fold over the remaining pastry and press it down with a fork, as shown in the picture below.



Slice your sausage rolls into 8 equally sized sausage rolls. Place onto a lined baking paper. Brush each roll with soy milk and sprinkle with sesame seeds.
Bake them in a preheated oven for 25-30 minutes, until they are golden brown and cooked all the way through.
Which pastry for sausage rolls
I always use ready made supermarket puff pastry for sausage rolls. Most supermarket puff pastry is vegan and it saves a lot of time not making it from scratch.

Pro tips
- Remove the casing from your sausages: The best way to remove the casing from vegan sausages is by using a sharp knife to cut a slit down the length of the sausage. You can then easily peel the casing off the sausage.
- Preheat your oven: Ensure your oven has fully preheated before you cook your sausage rolls. This will help your pastry to puff up nicely.
- Don’t allow your pastry to sit at room temperature for too long: Once your pastry is out of the fridge work quickly to make your sausage rolls and put them in the preheated oven as soon as possible. This also helps your pastry to puff up.
- Don’t rush your caramelised onions: To get the most delicious caramelised onions, low and slow is the way to go. The longer you cook your onions, the more sugars will be released and the sweeter they will become.

Vegan Sausage Rolls with Caramelised Onion and Apple
Ingredients
Method
- First, make the caramelised onions. Heat the olive oil in a medium sized frying pan. Add in your diced onions and fry, over a low heat, for 30 minutes stirring often. Season with a pinch of salt and sugar.
- Now add in your apple and fry for a further 20-30 minutes until beautifully caramelised.
- Preheat the oven to 200℃/180℃ ( fan 390℉/355℉).
- Combine the sausage meat, caramelised onion, apple and sage leaves in a bowl. Season with salt and pepper and combine.
- Lay out your puff pastry sheet. Shape your sausage meat in a large log down the length of the pastry, slightly to the right of centre.

- Brush the shorter edge with vegan milk. Fold over the pastry from the left hand side and roll tightly. Fold over the remaining pastry and seal using a fork.

- Slice into 8 equal sausage rolls. Brush each roll with a little milk and sprinkle over some sesame seeds.

- Bake for 25-30 minutes until golden brown and cooked all the way through.
