Fried Enoki Mushroom KFC Wraps

These fried enoki mushroom KFC wraps are surprisingly quick and simple to put together. The herbs and spices in the batter are based on the 11 herbs and spices famously used to make Kentucky Fried Chicken. This means the mushrooms are packed with flavour. I added sriracha vegan mayo to my wraps, but you could add any sauce you like! These wraps are also 100% plant-based!

Ingredients

Wraps

  • Mini white tortilla wraps
  • Enoki mushrooms
  • Shredded lettuce
  • Sriracha mayonnaise

Mushroom batter

  • Plain flour
  • Corn flour
  • Baking powder
  • Sea salt
  • Dried thyme
  • Dried basil
  • Dried oregano
  • Black pepper
  • White pepper
  • Smoked paprika
  • Ground ginger
  • Dijon mustard
  • Fizzy water

What is KFC vegan chicken made of

I used enoki mushrooms to make this KFC style vegan ‘chicken’ substitute. Enoki mushrooms are an Asian mushroom popular in Korean, Chinese and Japanese cooking. They are known for their spaghetti-like shape and unique crunchy texture.

How long to fry enoki mushrooms

In order to not use an excess amount of oil, I filled my pan with around 1cm of vegetable oil. I fried the mushroom bundles for around 2-3 minutes on each side until golden and crispy. Keep your oil at 175C/350F to make sure your mushrooms come out nice and crispy.

Where to buy enoki mushrooms

It is rare to find enoki mushrooms in mainstream U.K. supermarkets. They can, however, usually be found in the chilled section of Asian and Chinese supermarkets.

The best sauce for fried enoki mushroom wraps

The KFC twister wraps in the U.K. currently come with a choice of 5 different sauces. I made mine with sriracha mayo as this is easy to buy bottled and vegan. Here are some more sauce ideas for your vegan twister wraps:

Sweet chilli – just a standard supermarket Thai sweet chilli sauce would taste amazing with your wraps.

Buffalo sauce – if you love spice then buffalo sauce is definitely the way to go.

BBQ sauce – if spice isn’t your style then sweet bbq sauce is the sauce for you.

Garlic mayo – make your own garlic mayo by adding a little grated garlic into your mayo.

Crispy fried enoki mushrooms in a spicy, herby batter served in a soft tortilla wrap with crunchy lettuce and sriracha mayo.

Ingredients
  

  • 220g/8oz enoki mushrooms
  • 60g/½ cup plain flour
  • 40g/5 tbsp corn flour
  • ½ tsp baking powder
  • ½ tsp sea salt
  • ¼ tsp dried thyme
  • ¼ tsp dried basil
  • ¼ tsp dried oregano
  • ¼ tsp black pepper
  • ¼ tsp white pepper
  • 1 tsp smoked paprika
  • ¼ tsp ground ginger
  • ½ tsp dijon mustard
  • 180ml/¾ cup fizzy water or still
To assemble the wraps
  • 6 mini tortilla wraps
  • vegan sriracha mayo
  • 6 small handfuls shredded lettuce

Method
 

  1. In a large, flat-bottomed bowl whisk together the plain flour, corn flour, baking powder, salt, herbs and spices.
  2. Add in the water and mustard and whisk until there are no lumps remaining.
  3. Trim the brown roots from the mushrooms and slice lengthways through the base into 6 thin slabs.
  4. Working one by one dip the mushroom slabs into the batter and toss to coat completely.
  5. Fill a medium-large frying pan with around 1cm of vegetable oil. Turn the heat to medium and heat the oil until around 350F.
  6. Carefully add half of your battered mushrooms to the pan and fry for around 2-3 minutes on each side, or until golden all over.
  7. Carefully remove and dry on a plate lined with kitchen towel. Repeat with the remaining mushrooms.
  8. Add a handful of shredded lettuce on top of each mini wrap. Top with a generous drizzle of sriracha mayo, or your sauce of choice, and a bundle of crispy mushrooms. Enjoy!
