Ingredients
  

  • 120g/4.25oz plain flour
  • 2 tbsp caster sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 210ml/7.5oz non-dairy milk I used oat milk
  • 2 tsp apple cider vinegar
  • 1 tsp vanilla extract
Blueberry Compote
  • 170g/6oz frozen blueberries
  • 2 tbsp caster sugar
  • 1 tbsp water
  • 1/3 lemon juice
  • 1/4 tsp vanilla extract
To serve
  • Vegan yoghurt I used Alpro
  • Maple syrup

Method
 

  1. First make the pancakes. In a large bowl combine the flour, sugar, baking powder and salt
  2. Combine the milk, apple cider vinegar and vanilla extract in a small bowl
  3. Add the wet ingredients to the dry ingredients. Whisk until just combined. Do not over whisk. Let batter sit for 20-30 minutes
  4. Now make the blueberry compote. Add half the blueberries, sugar, water, lemon juice and vanilla into a pan. Heat and simmer for 10 minutes.
  5. After 10 minutes add the remaining blueberries and simmer for 8 more minutes. Pour into a bowl and set aside
  6. Now we are ready to cook the pancakes. Brush a frying pan lightly with vegetable oil. Heat on a high heat.
  7. Add 1/3 of a cup of batter. Once bubbles start to form on the pancakes turn the heat to medium low. Cook until golden brown on both sides. Repeat with the remaining pancake batter
  8. Serve the pancakes with yoghurt and the compote
