Ingredients

  • 2 bagels
  • 200g/7oz full fat cream cheese or your favourite cream cheese
  • everything but the bagel seasoning
  • 6 basil leaves
  • 1 large heirloom tomato or beef tomato
  • 20 thin slices of cucumber
  • 1 handful red onion shavings
  • 8 cherry tomatoes
  • salt and pepper to taste
  • extra virgin olive oil
  • ¼ lemon
Optional
  • pinch Flaky sea salt
  • 2 tbsp capers
  • 1 tbsp fresh dill sprigs roughly chopped

Method

  1. Slice the bagels in half and heat in the toaster until golden brown. If you don't have a toaster, place them under a hot grill for a few minutes until lightly toasted. Leave to cool slightly for a couple of minutes.
  2. Spread each bagel half with 50g of cream cheese.
  3. Top each bagel half with a few shakes of 'everything but the bagel seasoning' and 1½ torn basil leaves.
  4. Slice 4 large pieces from the heirloom tomatoes. Top each bagel with a slice.
  5. Top each bagel with 5 slices of cucumber and a few red onion shavings.
  6. Pulverise the 8 cherry tomatoes. Place in a seive and remove excess liquid. Place in a bowl and season to taste with salt and pepper.
  7. Spoon a quarter of the tomato mixture onto each bagel.
  8. Drizzle each bagel with a little olive oil and a squeeze of lemon juice.
  9. (Optional) sprinkle over some dill sprigs, capers and a little sea salt. Enjoy!
